A comforting and easy one-pot dish featuring tender chicken, orzo pasta, and broccoli in a creamy, cheesy sauce. Perfect for busy weeknights.

  • 1 lb chicken breast, diced
  • 1 cup orzo pasta
  • 2 cups broccoli florets
  • 2 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced chicken, season with garlic powder, salt, and pepper, and cook until browned.
  3. Stir in the orzo and chicken broth; bring to a boil.
  4. Reduce heat, cover, and simmer for about 10 minutes or until the orzo is tender.
  5. Add the broccoli florets and cook for an additional 3-5 minutes until the broccoli is tender.
  6. Remove from heat and stir in the cheddar and Parmesan cheese until melted. Serve warm.

Notes

You can replace chicken with rotisserie chicken for a quicker option. Feel free to add different vegetables or cheeses based on your preference.
