A delightful Orange Cardamom Cake that combines the sweet, sunny flavor of fresh oranges with warm, aromatic notes of cardamom.

Ingredients

  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cardamom
  • ½ cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¾ cup fresh orange juice
  • Zest of 1 orange
  • Powdered sugar for dusting or simple glaze

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground cardamom.
  3. Cream together the softened butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract, fresh orange juice, and orange zest.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool before dusting with powdered sugar or drizzling with a glaze.

Notes

Serve with whipped cream or vanilla ice cream. Store leftovers in an airtight container for up to 3 days at room temperature or up to a week in the refrigerator.
