Crispy, flaky phyllo pastry rolls filled with creamy feta cheese and herbs, drizzled with sweet and spicy chili honey.

Ingredients

  • 8 oz feta cheese
  • 8 sheets phyllo pastry
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp chili flakes
  • 1/4 cup honey
  • 1/4 cup fresh herbs (e.g., thyme or oregano)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Crumble the feta cheese into a bowl and mix with chopped fresh herbs, paprika, chili flakes, salt, and pepper.
  3. Lay one sheet of phyllo pastry on a clean surface and brush it lightly with olive oil.
  4. Layer another sheet of phyllo on top.
  5. Cut the sheets into rectangles.
  6. Spoon the feta mixture onto one end of each rectangle.
  7. Roll tightly, tucking in the edges, and place seam-side down on a baking sheet.
  8. Brush the tops with olive oil.
  9. Bake for 15-20 minutes until golden and crispy.
  10. Warm honey with a pinch of chili flakes.
  11. Serve feta rolls drizzled with the chili honey.

Notes

Keep phyllo pastry covered while working to prevent it from drying out. Experiment with different herbs for variations.
