A creamy, flavorful pasta dish featuring succulent shrimp, spicy Andouille sausage, and colorful veggies, reminiscent of Mardi Gras celebrations.

Ingredients

  • 8 ounces fettuccine pasta
  • 1 pound shrimp, peeled and deveined
  • 1/2 pound Andouille sausage, sliced
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 can diced tomatoes (14.5 ounces), undrained
  • 1 cup heavy cream
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped parsley for garnish

Instructions

  1. Cook the fettuccine: Bring a pot of salted water to a boil and cook the fettuccine according to package directions. Drain and set aside.
  2. Sauté the sausage: In a large skillet, heat olive oil over medium heat. Once hot, add the sliced Andouille sausage and cook until browned and fragrant.
  3. Add the shrimp and veggies: Stir in the shrimp, chopped bell pepper, onion, and minced garlic. Cook until the shrimp are pink and the veggies are tender.
  4. Incorporate the tomatoes and spices: Pour in the undrained diced tomatoes and sprinkle the Cajun seasoning. Stir and let simmer for about 5 minutes.
  5. Cream it up: Pour in the heavy cream and bring to a gentle simmer, stirring until well combined.
  6. Combine with pasta: Toss the cooked fettuccine into the Cajun mixture, blending well and seasoning with salt and pepper to taste.
  7. Serve and enjoy: Serve hot, garnished with chopped parsley.

Notes

For a milder dish, adjust the amount of Cajun seasoning. You can substitute shrimp for chicken or add more veggies as desired.
