A delightful Pavlova topped with fresh mixed berries and whipped cream, perfect for spring celebrations.

Ingredients

  • 4 large egg whites
  • 1 cup granulated sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon white vinegar
  • 1 cup heavy whipping cream
  • 1 tablespoon powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh mixed berries (strawberries, blueberries, raspberries)

Instructions

  1. Preheat the oven to 250°F (120°C) and line a baking sheet with parchment paper.
  2. In a clean bowl, beat the egg whites until stiff peaks form. Gradually add granulated sugar, beating well after each addition until beautifully glossy.
  3. Sprinkle in the cornstarch and drizzle the vinegar, gently folding until combined.
  4. Using a spatula, shape the meringue mixture into a round disk on the prepared baking sheet, creating a slight dip in the center.
  5. Bake for about 1 hour or until dry and crisp. Turn off the oven but leave the Pavlova to cool completely inside.
  6. While waiting, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form.
  7. Once cooled, top the Pavlova generously with whipped cream and arrange the fresh mixed berries on top.
  8. Serve immediately to your delighted guests!

Notes

Pavlova is best enjoyed fresh but can be stored in an airtight container for up to 2 days at room temperature.
