A delightful Peach Coffee Cake with a moist, fluffy texture, perfect for summer. Enjoy it for brunch or as an afternoon snack!

  • 1 cup sugar
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 2 cups fresh peaches, chopped
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch baking dish to ensure that our cake won’t stick.
  2. Cream together the softened butter and sugar until the mixture is light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the sour cream and vanilla extract.
  5. Combine the flour, baking powder, baking soda, and cinnamon in another bowl. Gradually add to the creamed mixture, mixing until just combined.
  6. Fold in the chopped fresh peaches.
  7. Pour the batter into the prepared baking dish and spread it out evenly.
  8. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  9. Dust with powdered sugar before serving.

Notes

For best results, use ripe peaches and consider experimenting with add-ins like blueberries or cherries.
