A rustic peach galette with a flaky crust and a bubbly filling brightly flavored with lemon and vanilla, perfect for summer gatherings.

  • 23 ripe peaches, sliced
  • 1 pre-made pie crust or homemade pastry dough
  • 1/4 cup sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 egg (for egg wash)
  • 1 tablespoon butter, cut into small pieces
  • Pinch of salt
  • Turbinado sugar (optional, for sprinkling)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine sliced peaches, sugar, cornstarch, lemon juice, vanilla extract, and a pinch of salt in a bowl.
  3. Roll out the pie crust on a baking sheet lined with parchment paper.
  4. Pour the peach mixture into the center of the crust, leaving a 2-inch border.
  5. Fold the edges of the dough over the peaches, pleating as necessary.
  6. Brush the crust with the beaten egg and sprinkle with turbinado sugar if desired.
  7. Dot the filling with pieces of butter.
  8. Bake for 30-35 minutes or until the crust is golden and the peaches are bubbly.
  9. Cool for a few minutes before slicing and serving.

Notes
