Delicious cheesecake cupcakes with pureed peaches and a hint of honey, topped with fresh peach slices.

Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 2 (8-ounce) packages cream cheese, softened
  • 1/2 cup honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup pureed peaches (or finely chopped)
  • Fresh peach slices for garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake tin with liners.
  2. Mix the graham cracker crumbs, sugar, and melted butter until combined. Press into the bottom of each cupcake liner to form a crust.
  3. Beat the cream cheese and honey until smooth.
  4. Add the eggs, one at a time, mixing well after each addition. Stir in vanilla extract and pureed peaches.
  5. Pour the cheesecake mixture over the crusts in the cupcake liners.
  6. Bake for 18-20 minutes, or until set.
  7. Cool completely before refrigerating for at least 2 hours.
  8. Garnish with fresh peach slices before serving.

Notes

Make sure your cream cheese is at room temperature for a smoother consistency. You can use fresh chopped peaches instead of puree.
