A delightful twist on a classic treat, Whole Peach Mochi captures the essence of summer peaches in a chewy, sweet rice flour coating.

Ingredients

Scale
  • 1 cup mochiko (sweet rice flour)
  • 3/4 cup filtered water
  • 1/4 cup granulated sugar
  • 1/4 cup potato starch (for dusting)
  • 3 ripe peaches

Instructions

  1. Prepare the peaches by washing and pitting them. Cut into quarters.
  2. Mix mochiko and granulated sugar in a bowl. Slowly add water while stirring to avoid lumps.
  3. Cook the mochi mixture in a microwave-safe dish, covering lightly with plastic wrap. Microwave for 1 minute, stir, cover, and microwave for another minute, repeating until shiny and slightly sticky.
  4. Dust a surface with potato starch and turn out the cooked mochi to cool.
  5. Shape the mochi by pinching off chunks, flattening them, and wrapping around peach quarters.
  6. Chill the completed mochi in the refrigerator for about 30 minutes.

Notes

Store any leftovers in an airtight container in the refrigerator for up to three days or freeze for longer storage, ensuring they are dusted with potato starch to prevent sticking.
