Deliciously fluffy muffins made with creamy peanut butter and ripe bananas, perfect for breakfast or a snack.

  • 2 ripe bananas
  • 1 cup peanut butter
  • 1/3 cup honey or maple syrup
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup flour (all-purpose or whole wheat)
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. Mash the ripe bananas in a large bowl until smooth.
  3. Add peanut butter, honey (or maple syrup), egg, and vanilla extract to the mashed bananas and mix until well combined.
  4. Whisk together flour, baking soda, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the chocolate chips, if using.
  7. Distribute the batter evenly among the muffin cups, filling them about three-quarters full.
  8. Bake for 18-20 minutes, or until a toothpick comes out clean.
  9. Cool the muffins on a wire rack before enjoying.

Notes

Store leftover muffins in an airtight container at room temperature for up to 3 days or in the refrigerator for a week. For longer storage, freeze them for up to 3 months.
