Delightful cookies made with chickpeas and peanut butter, offering a healthy twist on a classic treat.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 cup peanut butter
  • 1/2 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 cup chocolate chips (optional)
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Blend the chickpeas until smooth and creamy.
  3. Add peanut butter, maple syrup or honey, vanilla extract, baking soda, and a pinch of salt. Blend until combined.
  4. Fold in chocolate chips if desired.
  5. Drop tablespoon-sized amounts of dough onto a lined baking sheet.
  6. Bake for 10-12 minutes until lightly golden on the edges.
  7. Cool for a few minutes on the baking sheet before transferring to a wire rack.
