Delightful muffins inspired by pecan pie, with a rich blend of toasted pecans and gooey chocolate chips.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans
  • 1/2 cup mini chocolate chips
  • Optional: maple syrup for drizzling

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix together the all-purpose flour, brown sugar, granulated sugar, baking soda, and salt.
  3. Combine the melted butter, egg, and vanilla extract in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir just until combined.
  5. Fold in chopped pecans and mini chocolate chips.
  6. Distribute the batter evenly into the muffin tin, filling each liner about 2/3 full.
  7. Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool slightly, then remove them from the tin and drizzle with maple syrup if desired.

Notes

For extra flavor, toast the pecans before adding. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
