  • 1/2 cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup pecans, chopped
  • 1/2 cup corn syrup
  • 1/2 cup brown sugar
  • 1/4 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Create the graham cracker crust by mixing crumbs and melted butter, then press into a springform pan.
  3. Prepare the cheesecake filling by beating cream cheese and sugar until smooth, then mix in eggs and vanilla.
  4. Bake the cheesecake batter over the crust for 45 minutes until set with a slight jiggle.
  5. Cook the pecan topping by heating chopped pecans, corn syrup, brown sugar, and heavy cream until bubbly.
  6. Pour the pecan topping over the baked cheesecake.
  7. Chill the cheesecake in the refrigerator for at least 4 hours before serving.

Notes

Make sure the cream cheese is at room temperature for a smooth batter. This cheesecake tastes better after a day in the fridge.
