Delightful cookies capturing the flavors of pecan pie, easy to make and perfect for any occasion.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 cup chopped pecans
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the softened unsalted butter, brown sugar, and granulated sugar together until smooth and fluffy.
  3. Beat in the large egg and vanilla extract.
  4. Whisk together the all-purpose flour, salt, and baking soda in another bowl.
  5. Gradually blend the dry ingredients into the wet mixture.
  6. Fold in the chopped pecans.
  7. Drop rounded tablespoons of dough onto ungreased baking sheets.
  8. Bake for 10 to 12 minutes until edges are lightly golden.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Refrigerate the dough if too soft. Substitute pecans with walnuts or dried fruits if desired.
