Delightful cookies combining the flavors of pecan pie and hearty oats, perfect for sharing or enjoying alone.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup chopped pecans
  • 1/4 cup corn syrup
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until smooth.
  4. Mix the rolled oats, flour, baking soda, and salt in another bowl.
  5. Gradually add the dry ingredients to the wet mixture, stirring until combined.
  6. Fold in the chopped pecans and corn syrup.
  7. Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until edges are golden brown.
  9. Allow to cool slightly on the baking sheet before transferring to a wire rack.

Notes

For added flavor, try adding a pinch of cinnamon or swapping the corn syrup with maple syrup.
