A fragrant and colorful dish made with basmati rice, saffron, and sweet dried fruits, perfect for celebrations.

Ingredients

  • 2 cups basmati rice, rinsed and soaked for at least 30 minutes
  • 4 cups water (for cooking the rice)
  • 1/2 cup dried apricots, chopped
  • 1/2 cup raisins
  • 1/2 cup pistachios, chopped
  • 1/2 cup almonds, slivered
  • 1/4 cup orange zest
  • 1/4 cup sugar (adjust to taste)
  • 1 teaspoon saffron threads (dissolved in warm water)
  • Salt to taste
  • 1/4 cup butter or ghee (for sautéing)
  • Ground cinnamon (optional, for added flavor)

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear.
  2. Soak the rice in water for at least 30 minutes.
  3. Prepare the saffron by adding it to a small bowl with warm water.
  4. Cook the rice in a pot with boiling water and a pinch of salt for about 7-10 minutes.
  5. Drain the rice and set aside.
  6. Sauté the chopped apricots, raisins, pistachios, and slivered almonds in melted butter or ghee until softened.
  7. Combine the sautéed fruits and nuts with the rice, orange zest, sugar, and saffron water.
  8. Steam the mixture in a covered pot on low heat for about 20-25 minutes.
  9. Fluff the rice gently with a fork after resting for 5 minutes.

Notes

Adjust sugar according to taste; consider adding fresh herbs for variation.
