Persian Skewered Meat

Experience the rich flavors of Persian cuisine with tender marinated lamb or beef skewered and grilled to perfection.

Ingredients

  • 1 lb lamb or beef, cubed
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • Salt and pepper to taste
  • Skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions

  1. Combine the meat, onion, garlic, olive oil, cumin, coriander, turmeric, salt, and pepper in a large bowl. Mix well to coat the meat evenly.
  2. Cover the bowl and marinate in the refrigerator for at least 1 hour, preferably overnight.
  3. Preheat your grill or oven broiler.
  4. Thread the marinated meat onto skewers, leaving a little space between each piece.
  5. Grill or broil the skewers for about 10-15 minutes, turning occasionally, until the meat is cooked to your desired level of doneness.
  6. Serve hot with flatbreads and your choice of dips or salads.

Notes

Soak wooden skewers for 30 minutes to prevent burning. Overnight marination yields the best flavor but even an hour works well.
