A flavorful dish featuring chicken marinated in ají amarillo paste, perfect for bringing a taste of Peru to your home.

Ingredients

Scale
  • 6 pieces chicken thighs
  • 3 tablespoons ají amarillo paste
  • 4 cloves garlic, minced
  • 2 tablespoons lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 medium red onion, sliced
  • 1 cup chicken broth
  • 1/4 cup chopped cilantro
  • 1 fresh ají amarillo pepper

Instructions

  1. Prepare the Marinade: In a bowl, combine the ají amarillo paste, minced garlic, lime juice, ground cumin, smoked paprika, salt, black pepper, and vegetable oil to form a vibrant marinade that will encapsulate the chicken with flavor.
  2. Marinate the Chicken: Add the chicken thighs to the marinade and coat them thoroughly. For optimal flavor infusion, let them marinate in the fridge for at least 30 minutes, or up to 2 hours if you have the time.
  3. Preheat the Oven: As your chicken soaks in all those delicious flavors, preheat the oven to 200°C (400°F) so it’s ready to give your marinated chicken that crispy finish.
  4. Bake the Chicken: Place the marinated chicken on a baking sheet and pop it in the oven. Bake for 25 to 30 minutes or until the chicken is beautifully cooked through and golden brown.
  5. Sauté the Onions: While the chicken is baking, heat a skillet over medium heat. Add the sliced red onion and sauté until it’s translucent, about 5 minutes.
  6. Add Fresh Flavor: Once the onions are ready, toss in the fresh ají amarillo pepper and cook for another 2 minutes, stirring frequently.
  7. Create the Sauce: Pour in the chicken broth and bring everything to a gentle simmer. Cook for about 5 minutes, then stir in the chopped cilantro for a burst of freshness.
  8. Let the Chicken Rest: Remove the chicken from the oven and let it rest for about 5 minutes.
  9. Serve with Sauce: Serve the chicken topped with the delightful amarillo sauce.
