A comforting and flavorful pasta dish featuring vibrant basil pesto, tender chicken, and sweet cherry tomatoes.

Ingredients

  • 8 oz pasta (spaghetti or penne)
  • 2 cups cooked chicken, shredded
  • 1 cup basil pesto
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh basil leaves for garnish

Instructions

  1. Cook the pasta according to package instructions, then drain and set aside.
  2. In a large pan, heat the olive oil over medium heat.
  3. Add the shredded chicken and cherry tomatoes, and sauté for 3-5 minutes until the tomatoes start to soften.
  4. Stir in the cooked pasta and pesto, mixing well to coat every strand.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with grated Parmesan and fresh basil leaves.

Notes

For a vegetarian option, swap chicken for sautéed tofu or roasted vegetables.
