  • 1 cup brown sugar
  • 1 can (20 oz) sliced pineapple
  • Maraschino cherries
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the butter in a round cake pan until bubbling.
  3. Arrange the sliced pineapple over the brown sugar mixture and nestle the cherries in.
  4. Whisk together the flour, granulated sugar, salt, and baking powder in a mixing bowl.
  5. Combine the milk, vanilla extract, and eggs in another bowl and whisk until blended.
  6. Pour the wet mixture into the flour blend, stirring until just combined.
  7. Gently pour the batter over the arranged pineapple and cherries.
  8. Bake for about 35-40 minutes or until a toothpick comes out clean.
  9. Cool for a few minutes and then invert onto a serving plate.

Notes

Serve warm or at room temperature with vanilla ice cream or whipped cream. Store leftovers tightly covered in the refrigerator for up to 3 days.
