A nostalgic Pineapple Upside Down Cake with caramelized pineapple and cherries, perfect for celebrations.

  • 1 cup brown sugar
  • 1 can (20 oz) sliced pineapple, drained
  • Maraschino cherries
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 3 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 3 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the butter and pour it evenly into the bottom of a round cake pan. Sprinkle brown sugar over the butter.
  3. Arrange the pineapple slices atop the butter and sugar mixture, and place a cherry in the center of each pineapple slice.
  4. Mix the flour, granulated sugar, baking powder, and salt until well combined.
  5. Whisk together the milk, vanilla, and eggs.
  6. Combine the wet and dry ingredients until smooth, ensuring there are no lumps.
  7. Pour the batter over the pineapple in the pan, covering the slices evenly.
  8. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  9. Let cool for a few minutes, then invert onto a serving plate to reveal the beautiful pineapple topping.

Notes
