Ingredients

  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 tablespoon lemon zest
  • 1/4 cup lemon juice
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chopped pistachios

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Incorporate the lemon zest and lemon juice, allowing the citrusy fragrance to fill your kitchen.
  5. Mix together the flour, baking powder, baking soda, and salt until well incorporated.
  6. Combine the dry ingredients with the wet mixture, alternating with the milk, starting and ending with the flour mixture. Mix until just combined.
  7. Add the chopped pistachios, creating a gorgeous speckled batter.
  8. Pour the batter into the prepared loaf pan and smooth the top for an even bake.
  9. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
