An elegant dessert with rich pistachio mousse layered over a crunchy praline crust, topped with a glossy chocolate glaze.

Ingredients

  • 1 cup pistachio paste
  • 1 cup heavy cream
  • 3/4 cup milk
  • 1/2 cup sugar
  • 4 large eggs
  • 1/3 cup all-purpose flour
  • 1/2 cup crushed praline
  • 1 chocolate cake layer
  • 1 cup dark chocolate (for glaze)
  • 1/2 cup water
  • 2 tablespoons gelatin

Instructions

  1. Prepare the sponge cake layer and let it cool completely.
  2. In a saucepan, heat the milk and sugar until dissolved. In a bowl, whisk the eggs and slowly add the warm milk mixture, being careful not to scramble the eggs.
  3. Return to heat and cook, stirring continuously, until thickened. Remove from heat and let it cool slightly.
  4. Stir in the pistachio paste into the cooled custard and let cool completely.
  5. Once at room temperature, fold in the whipped cream gently until combined.
  6. In a separate bowl, mix crushed praline with a bit of melted butter and press firmly into the bottom of your mold.
  7. Layer the chilled sponge cake on top of the praline mixture, followed by the luxurious pistachio mousse.
  8. Refrigerate the assembled entremet until set, which usually takes about two hours.
  9. Melt the dark chocolate with water and gelatin until silky smooth.
  10. Cautiously pour the glaze over the chilled entremet and allow it to set in the fridge for at least 30 minutes.
  11. Once set, remove from the mold and slice to serve, revealing the stunning layers within.
