A tender and flavorful pork roast, perfect for family gatherings and cozy dinners.

  • 4.5 lbs picnic roast, boneless
  • 3 tbsp olive oil
  • 2 tbsp garlic, minced
  • 2 tbsp oregano
  • 2 tbsp paprika
  • 1 tbsp salt
  • 1 tbsp pepper

Instructions

  1. Preheat your oven to 325°F and line a baking sheet with foil, placing a rack on top.
  2. Lightly spray the rack with non-stick spray.
  3. In a small bowl, combine the olive oil with the minced garlic and dry seasonings—oregano, paprika, salt, and pepper.
  4. Generously rub the seasoning blend all over the picnic roast.
  5. Place the seasoned roast on top of the prepared rack and let it bake uncovered for about 4.5 to 5 hours.
  6. Once cooked, remove the roast from the oven and let it rest for 15 minutes.
  7. After resting, shred the pork and optionally toss with barbecue sauce before serving.

Notes

Use a meat thermometer to ensure you reach the proper internal temperature of 195°F for the best texture.
