A comforting dish combining tender pork with sweet and tangy applesauce, perfect for autumn gatherings.

Ingredients

  • 1.5 pound pork tenderloin
  • 1 cup applesauce
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 1 small onion, diced
  • 1 tablespoon Dijon mustard

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pat the pork tenderloin dry with paper towels and season it with salt and pepper.
  3. Heat olive oil in an ovenproof skillet over medium-high heat and sear the pork on all sides until golden brown.
  4. Reduce the heat to medium and add the diced onion and minced garlic to the skillet.
  5. Stir in the applesauce, Dijon mustard, and fresh thyme, scraping up any browned bits.
  6. Return the seared pork to the skillet, spooning some of the sauce over the top.
  7. Transfer the skillet to the oven and roast until the pork reaches an internal temperature of 145°F (63°C).
  8. Remove the pork from the oven and let it rest for 5 to 10 minutes before slicing.
  9. Slice the pork and spoon extra sauce over the top before serving.

Notes

Pairs beautifully with roasted vegetables or creamy mashed potatoes. Leftovers can be stored for up to 3 days.
