  • 34 lbs beef chuck roast
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 carrots, chopped
  • 3 potatoes, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon rosemary

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Heat olive oil in a large Dutch oven over medium-high heat.
  3. Season the roast with salt, pepper, thyme, and rosemary.
  4. Sear the roast on all sides until browned, about 4-5 minutes per side.
  5. Remove the roast and set aside.
  6. Sauté onions, carrots, and garlic until softened.
  7. Add beef broth and Worcestershire sauce, scraping up any browned bits.
  8. Return the roast to the pot.
  9. Add potatoes around the roast.
  10. Cover and transfer to the oven.
  11. Roast for 3-4 hours until the meat is tender.
  12. Remove from the oven and let rest for 10 minutes before slicing. Serve warm.
