A comforting and creamy Potato Leek Soup made with simple ingredients, perfect for sharing with loved ones.

Ingredients

  • 2 large leeks
  • 4 Yukon Gold potatoes
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons butter
  • Chopped fresh parsley for garnish

Instructions

  1. Clean and chop the leeks, using only the white and light green parts, and rinse thoroughly.
  2. Sauté the leeks in butter over medium heat for about 5 minutes until soft.
  3. Peel and dice the Yukon Gold potatoes into bite-sized cubes.
  4. Combine the diced potatoes with the sautéed leeks and pour in the broth, bringing to a boil.
  5. Simmer for about 20 minutes, or until potatoes are tender.
  6. Puree the soup until smooth using an immersion blender.
  7. Stir in the heavy cream and season with salt and pepper.
  8. Serve hot, garnished with chopped parsley.
