A deliciously gooey and cheesy quesadilla packed with high-quality protein, creamy ranch dressing, and a touch of green onion for crunch.

  • 2 pieces flour tortillas
  • 1 cup cooked chicken, shredded
  • 1/2 cup ranch dressing
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup chopped green onions
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients by gathering all required items and ensuring the chicken is cooked and shredded.
  2. Mix the shredded chicken with ranch dressing, salt, and pepper in a bowl until well-coated. Fold in chopped green onions.
  3. Heat a skillet over medium heat and add olive oil, coating the bottom of the pan.
  4. Assemble the quesadilla by spreading half of the chicken-ranch mixture on one tortilla, topping it with half of the cheese, then placing the second tortilla on top.
  5. Cook the quesadilla in the skillet for about 3-4 minutes until the bottom is golden brown and crisp.
  6. Flip the quesadilla using a spatula, cooking the other side for another 2-3 minutes until the cheese is melted.
  7. Slice the quesadilla into wedges and serve after letting it cool for a minute.

Notes

Serve with fresh salsa, sour cream, or guacamole. These quesadillas also store well in an airtight container for up to 2 days.
