Delicious no-bake bars packed with protein, chocolate, and a delightful crunch, perfect for a nutritious snack or breakfast.

Ingredients

  • 1 cup cooked quinoa
  • 1/2 cup chocolate protein powder
  • 1/2 cup nut butter (like almond or peanut butter)
  • 1/4 cup honey or maple syrup
  • 1/2 cup puffed quinoa or rice cereal
  • 1/4 cup chocolate chips (optional)
  • Pinch of salt

Instructions

  1. Combine the dry ingredients in a large mixing bowl: cooked quinoa, chocolate protein powder, nut butter, honey or maple syrup, and salt until well mixed.
  2. Fold in the puffed quinoa and chocolate chips if using.
  3. Press the mixture firmly into the bottom of a lined 8×8 inch baking dish.
  4. Chill for at least 1 hour until set.
  5. Cut into bars and enjoy as a healthy snack or breakfast!

Notes

Store bars in an airtight container in the refrigerator for up to 1 week. For longer storage, freeze individually wrapped bars for up to 3 months.
