Deliciously wholesome cottage cheese bites packed with protein, fresh blueberries, and a refreshing hint of lemon zest.

Ingredients

  • 1 cup cottage cheese
  • 1 cup fresh blueberries
  • 1 tablespoon lemon zest
  • 2 tablespoons honey or maple syrup (optional)
  • 1/2 cup oats
  • 1 tablespoon chia seeds (optional)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Combine the cottage cheese, lemon zest, honey or maple syrup (if using), oats, chia seeds (if desired), and vanilla extract in a mixing bowl.
  2. Fold in the fresh blueberries gently to keep them intact.
  3. Scoop the mixture into bite-sized portions and form into balls or leave flat.
  4. Chill the bites on a parchment-lined tray for at least 30 minutes to set.
  5. Serve chilled or store in an airtight container in the refrigerator for up to a week.
