  • 1/2 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • Frosting (cream cheese or vanilla)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter, sugar, and brown sugar until light and fluffy.
  3. Beat in the egg, pumpkin puree, and vanilla extract until well combined.
  4. Whisk together the flour, pumpkin pie spice, espresso powder, baking soda, and salt in another bowl.
  5. Add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Allow to cool before adding frosting on top.
