A delightful taco bowl filled with seasoned beef, black beans, and fresh toppings, perfect for a busy weeknight dinner.

Ingredients

  • 1 cup rice
  • 1 cup beef broth or water
  • 1 packet taco seasoning
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (fresh or frozen)
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 cup shredded cheese
  • Sour cream (for serving)
  • Salsa (for serving)
  • Avocado slices (for serving)
  • Fresh cilantro (for garnish)

Instructions

  1. Sauté the ground beef in a skillet over medium heat until browned, breaking it up into crumbles. Drain any excess fat.
  2. Add the taco seasoning and beef broth or water, stirring well, and let it simmer for 5 minutes.
  3. Cook the rice according to the package instructions.
  4. Divide the cooked rice among serving bowls for the base.
  5. Top each bowl with seasoned beef, black beans, corn, diced tomatoes, lettuce, and cheese.
  6. Finish with sour cream, salsa, avocado slices, and garnish with cilantro before serving.
