Healthy and delicious quinoa protein muffins packed with flavor and nutrition.

Ingredients

  • 1 cup quinoa, cooked
  • 1 cup almond flour
  • 1/2 cup protein powder
  • 3 eggs
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk (dairy or non-dairy)
  • 1/2 cup fresh berries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it.
  2. In a large bowl, mix the cooked quinoa, almond flour, protein powder, baking powder, and salt until well combined.
  3. In another bowl, whisk together the eggs, honey (or maple syrup), and milk.
  4. Pour the wet mixture into the dry ingredients and mix until just combined.
  5. Gently fold in the fresh berries if using.
  6. Divide the batter evenly into the muffin tin, filling each cup about 3/4 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  8. Let cool for a few minutes before transferring to a wire rack.

Notes

Store leftover muffins in an airtight container in the fridge for up to 5 days or freeze them for up to three months.
