This hearty one-pan breakfast skillet combines breakfast sausage, crispy potatoes, and perfectly cooked eggs, topped with melted cheese and green onions for a delightful morning meal.

Ingredients

  • 4 large eggs
  • 1 cup diced breakfast sausage
  • 1 cup diced potatoes
  • 1/2 cup diced bell pepper
  • 1/2 cup diced onion
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Brown the sausage in a large skillet over medium heat until browned.
  2. Add the diced potatoes, bell pepper, and onion to the skillet. Cook until the potatoes are tender and vegetables are softened, about 10-15 minutes.
  3. Create four wells in the mixture. Crack the eggs into the wells. Cover the skillet and cook until the eggs are set, about 5-7 minutes.
  4. Add the shredded cheese over the top and cover until the cheese melts.
  5. Season with salt and pepper, then garnish with chopped green onions.

Notes
