A delightful and nourishing baked oatmeal recipe featuring rolled oats, fresh raspberries, and crunchy almonds.

  • 2 cups milk (or plant-based milk)
  • 1 cup fresh raspberries
  • 1/2 cup almonds, chopped
  • 1/4 cup maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the rolled oats, milk, maple syrup, vanilla extract, almond extract, baking powder, salt, and cinnamon in a large bowl. Stir until well mixed.
  3. Fold in the fresh raspberries and chopped almonds gently.
  4. Pour the mixture into a greased baking dish, spreading it evenly.
  5. Bake for 30-35 minutes, or until the top is golden brown and set.
