Delicious Raspberry Almond Bars that balance the tartness of fresh raspberries with the warm, nutty flavor of almond.

  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon baking powder
  • 1 cup fresh raspberries
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8-inch square baking pan.
  2. Combine the almond flour, granulated sugar, and baking powder in a mixing bowl. Stir until evenly mixed.
  3. Add softened butter, egg, vanilla extract, and almond extract to the dry ingredients. Mix until smooth and creamy.
  4. Pour the batter into the prepared baking pan, spreading it evenly.
  5. Distribute the fresh raspberries evenly over the batter, pressing them slightly into the mixture.
  6. Bake for 25-30 minutes or until the edges are golden brown and a toothpick comes out clean.
  7. Let the bars cool completely in the pan.
  8. Dust the cooled bars with powdered sugar and slice into squares.
