  • 9 oz fresh or frozen ravioli
  • 4 oz pancetta or bacon, diced
  • 2 large eggs
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the ravioli according to package instructions. Reserve a little pasta water for later!
  2. Sauté the diced pancetta or bacon in a large skillet over medium heat until crispy and golden brown.
  3. Whisk together the eggs, heavy cream, and Parmesan cheese in a separate bowl until smooth.
  4. Combine the cooked ravioli with the crispy pancetta in the skillet and toss gently.
  5. Create the creamy sauce by pouring the egg and cream mixture over the ravioli and pancetta, stirring quickly to prevent scrambling.
  6. Season with salt and pepper to taste.
  7. Plate immediately and garnish with fresh parsley.
