  • 1 bunch asparagus, woody ends trimmed
  • 4 large carrots, peeled and sliced into sticks
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Optional: Grated Parmesan cheese, for serving

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the asparagus and carrots.
  3. Combine the asparagus and carrot sticks in a large mixing bowl with olive oil, garlic, thyme, salt, and pepper.
  4. Spread the seasoned vegetables in a single layer on a baking sheet.
  5. Roast for about 20 minutes, stirring halfway through.
  6. Garnish with Parmesan cheese if desired and serve warm.

Notes
