A simple yet sophisticated dish featuring vibrant roasted asparagus and carrots, perfect for any meal.

  • 1 bunch asparagus
  • 4 medium carrots
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon lemon juice
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash the asparagus and carrots thoroughly. Trim the ends and peel the carrots.
  3. Slice the carrots into sticks or rounds, similar in size to the asparagus.
  4. Toss the vegetables with olive oil, salt, pepper, garlic powder, and lemon juice in a large bowl.
  5. Lay the seasoned vegetables out in a single layer on a baking sheet.
  6. Place the baking sheet in the preheated oven and roast for 15-20 minutes, stirring halfway through.
  7. Remove from the oven and garnish with fresh parsley before serving warm.
