A simple yet delicious side dish of roasted asparagus and carrots, bursting with flavor and crispy perfection.

Ingredients

  • 1 pound asparagus, trimmed
  • 1 pound carrots, peeled and cut into sticks
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Combine the trimmed asparagus and carrot sticks in a large bowl.
  3. Drizzle olive oil over the vegetables and sprinkle with salt, black pepper, garlic powder, and thyme.
  4. Toss the vegetables until they are evenly coated with the olive oil and seasonings.
  5. Spread the seasoned vegetables in a single layer on a baking sheet.
  6. Roast in the preheated oven for 20-25 minutes, stirring halfway through.
  7. Cool for a few minutes before serving.
