A delightful recipe for roasted sweet potatoes, enhanced with garlic and melted Parmesan, perfect as a side dish or a snack.

  • 2 large sweet potatoes
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cube the sweet potatoes into bite-sized pieces.
  3. In a large bowl, toss the sweet potatoes with olive oil, minced garlic, salt, and pepper until evenly coated.
  4. Spread the sweet potatoes in a single layer on a baking sheet.
  5. Roast in the preheated oven for about 25-30 minutes, stirring once halfway through.
  6. Remove from the oven and sprinkle with Parmesan cheese.
  7. Return to the oven for an additional 5 minutes or until the cheese is melted and bubbly.
  8. Garnish with fresh parsley, if desired, and serve warm.

Notes

Leftover sweet potatoes can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven to maintain crunch.
