A creamy and zesty Rotel dip perfect for gatherings and casual snacking.

Ingredients

  • 1 can Rotel tomatoes
  • 1 lb Velveeta cheese
  • 1 lb ground beef (optional)
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • Salt to taste
  • Tortilla chips for serving

Instructions

  1. Brown the ground beef in a skillet over medium heat, if using. Don’t forget to drain excess grease.
  2. Cube the Velveeta cheese into small cubes.
  3. Combine the Rotel tomatoes and the cubed Velveeta cheese in a large pot (and the browned beef, if you’re using it).
  4. Melt over medium-low heat, stirring occasionally, until the cheese is fully melted.
  5. Stir in the chili powder, garlic powder, and add salt to taste.
  6. Serve your warm, cheesy Rotel dip with tortilla chips.

Notes

For a creamier dip, add milk or cream while melting the cheese. Substitute Velveeta with cream cheese and shredded cheddar for a different flavor.
