Ingredients

  • 1/2 cup breadcrumbs
  • 1/4 cup onion, finely chopped
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste
  • 1 cup beef broth
  • 1 tbsp cornstarch
  • 1 tbsp olive oil
  • 2 lbs potatoes, peeled and quartered
  • 1/4 cup milk
  • 2 tbsp butter
  • 2 tbsp fresh herbs (like parsley and chives), chopped

Instructions

  1. Prepare the Meatball Mixture: In a large bowl, combine ground beef, breadcrumbs, finely chopped onion, egg, minced garlic, Worcestershire sauce, and a sprinkle of salt and pepper. Use your hands to mix everything gently until well combined.
  2. Form the Meatballs: With your hands, shape the beef mixture into meatballs about the size of a golf ball.
  3. Sauté the Meatballs: In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the meatballs, browning them on all sides for about 5-7 minutes.
  4. Simmer the Gravy: Once the meatballs are nicely browned, remove them from the skillet. Pour in the beef broth, bringing it to a gentle simmer.
  5. Thicken the Gravy: In a small bowl, mix 1 tablespoon of cornstarch with a little water until smooth. Stir this mixture into the simmering broth, allowing it to thicken. Return the meatballs to the skillet.
  6. Boil the Potatoes: Place the peeled and quartered potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15 minutes.
  7. Mash the Potatoes: Once the potatoes are tender, drain them and return them to the pot. Add 1/4 cup milk, 2 tablespoons of butter, and the chopped fresh herbs. Mash until smooth and creamy.
  8. Serve and Enjoy: Plate with a generous portion of garlic herb mashed potatoes topped with meatballs and gravy.
