Delicious soft and chewy cookies filled with honey and crunchy pistachios, topped with flaky sea salt for a perfect treat.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup honey
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped pistachios
  • Flaky sea salt for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Mix in the honey until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Gently fold in the chopped pistachios.
  7. Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
  8. Sprinkle a small pinch of flaky sea salt on top of each cookie.
  9. Bake for 10-12 minutes or until the edges are golden.
  10. Allow to cool slightly on the baking sheet before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze them in a single layer in a freezer bag for up to three months.
