A comforting dish of warm tortillas filled with scrambled eggs, savory sausage, and melty cheese, perfect for breakfast or brunch.

  • 4 large tortillas
  • 1 pound sausage
  • 6 eggs
  • 1 cup shredded cheese
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 cup salsa
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté diced onions and bell peppers for about 5 minutes until softened.
  3. Add sausage to the skillet and cook until browned and cooked through.
  4. In a bowl, beat the eggs and pour over the sausage mixture, scrambling until cooked to your liking.
  5. On a flat surface, lay a tortilla, fill with the sausage and egg mixture, sprinkle with cheese, and roll tightly. Place seam-side down in a greased baking dish.
  6. Repeat with remaining tortillas. Pour salsa over the top and add extra cheese if desired.
  7. Bake in the preheated oven for 20-25 minutes until cheese is melted and bubbly.
  8. Serve hot and enjoy!

Notes

For easier rolling, warm tortillas in the microwave. You can add other ingredients like black beans or spinach for extra nutrition.
