Delicious egg rolls filled with breakfast sausage, cheese, and scrambled eggs, perfect for a unique breakfast treat or party appetizers.

Ingredients

  • 1 pound breakfast sausage
  • 1 cup shredded cheese (cheddar or a blend)
  • 4 large eggs
  • 1 tablespoon milk
  • 1 package egg roll wrappers
  • Oil for frying
  • Salt and pepper to taste

Instructions

  1. Cook the sausage in a skillet over medium heat until browned and fully cooked. Drain excess fat.
  2. Prepare the egg mixture by whisking together the eggs, milk, salt, and pepper. Pour into the skillet with the sausage and scramble until fully cooked.
  3. Remove from heat and mix in the shredded cheese until melted.
  4. Take an egg roll wrapper and place about 2 tablespoons of the sausage and cheese mixture in the center. Fold the wrapper, sealing the edges with water.
  5. Heat oil in a frying pan over medium-high heat. Once hot, add the egg rolls, cooking until golden brown and crispy on all sides.
  6. Remove from oil and drain on paper towels. Serve warm.

Notes

These egg rolls are great for breakfast or as appetizers. Serve with spicy sriracha or zesty ranch dressing.
