Delicious breakfast roll-ups filled with fluffy scrambled eggs, savory sausage, and melted cheese, all wrapped in a warm tortilla.

  • 1 cup milk
  • 1 pound sausage (crumbled)
  • 1 cup cheese (shredded, e.g., cheddar or mozzarella)
  • Salt and pepper to taste
  • 8 large tortillas or flatbreads
  • Cooking spray or oil for the pan

Instructions

  1. Whisk the egg mixture in a large bowl.
  2. Sauté the crumbled sausage in a skillet over medium heat until browned.
  3. Combine the egg mixture with the sausage in the skillet and cook until eggs are fully cooked.
  4. Melt the shredded cheese into the mixture until gooey.
  5. Prepare a tortilla by spooning the filling down the center.
