Savory Coconut Beef Curry

A warm, hearty curry with tender beef simmered in aromatic coconut milk and spices.

Ingredients

  • 1 lb beef (cut into bite-sized pieces)
  • 1 can (14 oz) coconut milk
  • 2 tbsp curry powder
  • 1 onion (chopped)
  • 3 cloves garlic (minced)
  • 1 tbsp ginger (grated)
  • 1 cup beef broth
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until translucent.
  2. Stir in the garlic and ginger, cooking for another minute until fragrant.
  3. Add the beef pieces to the pot and brown them on all sides.
  4. Sprinkle the curry powder over the beef and stir well to coat.
  5. Pour in the coconut milk and beef broth, stirring to combine.
  6. Bring the mixture to a simmer, then reduce heat to low and cover.
  7. Let it simmer for about 1.5 to 2 hours, or until the beef is tender.
  8. Once the beef is tender, season with salt and pepper to taste.
  9. Serve hot, garnished with fresh cilantro.

Notes

For a richer taste, use full-fat coconut milk. Leftovers taste even better the next day.
