A comforting layered casserole featuring sauerkraut, savory meat, and melted cheese, perfect for chilly evenings.

Ingredients

  • 1 jar (32 oz) sauerkraut, drained
  • 1 lb ground beef or sausage
  • 1 onion, chopped
  • 2 cups cooked rice
  • 1 cup shredded cheddar cheese
  • 1 tsp caraway seeds (optional)
  • Salt and pepper to taste
  • 1 can (15 oz) tomato sauce

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté the ground beef or sausage with the chopped onion until browned. Drain excess fat.
  3. Combine the drained sauerkraut, cooked rice, meat mixture, caraway seeds, salt, and pepper in a large bowl.
  4. Layer half of the mixture in a greased casserole dish, with half of the tomato sauce and half of the cheddar cheese. Repeat the layers.
  5. Bake covered with foil for 30 minutes.
  6. Unveil the layers by removing the foil and bake for an additional 15-20 minutes until the cheese is bubbly and golden.
  7. Rest for a few minutes before serving.

Notes

This casserole pairs well with a crisp green salad and a dollop of sour cream.
