A comforting casserole combining tangy sauerkraut, rich ground beef, and hearty rice, topped with gooey cheddar cheese.

Ingredients

  • 1 can sauerkraut, drained
  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cups cooked rice
  • 1 can diced tomatoes
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • 1 tsp paprika
  • 1 tsp garlic powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté the ground beef and onion in a skillet over medium heat until browned.
  3. Combine the cooked beef mixture with sauerkraut, rice, diced tomatoes, and spices in a large bowl.
  4. Pour the mixture into a greased baking dish and top with shredded cheese.
  5. Cover with foil and bake for 30 minutes.
  6. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  7. Serve warm and enjoy with loved ones.

Notes

Leftovers can be stored in the fridge for up to 3 days or frozen for up to a month. Consider adding different cheeses or spices for variation.
